You guys. I was unsure what could surpass my hearty Black Bean Quesadillas. However, we now have the chance to have an extremely good competitor! The Ultimate BBQ Chicken Quesadillas are loaded with juicy chicken pieces with delicious cheddar and spicy jalapenos, cilantro, black beans, and red onion, all coated in the delightful tanginess that is Sweet Baby Ray’s BBQ Sauce. They’re just amazing.
FLEXIBLE FILLING INGREDIENTS
This recipe can be modified and adapted to your needs, too. If you’re not a fan of black beans, you can add more chicken. Are you not a fan of chicken (or prefer to have a vegetarian alternative)? Double the beans in black. Is Jalapenos too hot, or does cilantro taste like soap to you? Both are possible to skip, and you’ll have an amazing quesadilla. Do you want to experiment with something new? Try adding some crushed (and well-drained) pineapple!
INGREDIENTS
1.5 cups chopped cooked, chopped chicken ($1.50)
1 15oz. Black beans in a can drain ($0.95)
1/4 onion red ($0.19)
One jalapeno ($0.12)
1/2 cup fresh cilantro ($0.23)
2 cups shredded cheddar ($1.99)
One teaspoon one tsp chili powder ($0.10)
1/8 TSP 1/2 tsp smoked paprika ($0.05)
1/4 tsp salt ($0.02)
1/2 cup New WindowBBQ Sauce ($0.53)
Ten 7-inch flour tortillas ($1.58)
INSTRUCTIONS
Add the chicken pieces and black beans that have been rinsed to the bowl of a large size. Finely chop in the red onion. Take the seeds out of the jalapeno and then chop it finely. Remove the leaves of cilantro from their stems and chop them into pieces. Add jalapeno, onion, and cilantro, as well as chopped cheddar, chili powder salt, smoked paprika, and BBQ sauce, into the bowl together with the beans and chicken. Mix until everything is evenly mixed.
Put about 1/3 of the BBQ chicken mix on each tortilla. Spread it evenly across the top half of the tortilla. Close the tortilla. The filled tortillas and the folded tortillas in a dry pan over low heat until the tortilla’s exterior is golden and crisp and the filling is heated to a point where the cheese melts. Cut each quesadilla into half and serve.
