Robust yet elegant this wine is created to be complex and intriguing, it is hand crafted to capture the essence of Sauvignon Blanc and Semillon fruit characters with complexities from maturation in French Oak (8 months), malo-lactic fermentation and battonage. Aromas of apricot and orange marmalade are upfront with mouth filing with flavours of lemon butter, gooseberry and lime, finishing with creamy oak notes and crisp acidity. Drink now or cellar up to 5 years.
FOOD MATCH: Great with a robust cheese or rich seafood or poultry dish.
Demonstrates how well Margaret River SBS (and SSB) wines mature in the cellar. The wine has gained complexity in bottle thanks to ageing (though not fermentation) of ‘select parcels' of the wine were matured and ‘delicately-blended with fruit-driven components'.
